What do you need? \
6 tartare patties:
Ingredients:
• 1 /2 cup cooked beets (200g)
• 2 medium carrots/ 1 big carrot thinly sliced
• 1/2 red onion, diced
• 1 stalk celery chopped up, dices
• 2 cloves garlic, diced
• 1 cup cooked lentils
• 1 cup fresh cilantro
• 3 tbsp miso paste
• 2 tbsp tomato paste
• 1 tablespoon nut butter (almond, soy, tahini, cashew, peanut)
• Olive oil to sauté vegetables (except for the cooked lentils and cooked beets)
• 1/4 cup rice wine
• 1/2 cup water
• 1/2 cup vegetable stock
• 1 ½ teaspoon garlic powder
• ¼ teaspoon black pepper
• 1/2 tsp black salt
• 1/2 tbsp oregano
• 1/2 tbsp dry parsley
• 1 tbsp paprika
• 2/3 cup vital wheat gluten
And we are ready!
- In a skillet, sautè carrots, red onions, celery, garlic in some olive oil until brown
- Add miso paste, tomato paste, water, peanut butter
- Don’t let the veggies dry up, add rice wine and let simmer
- Add in salt, pepper, paprika, dry oregano & dry parsley
- Put all cooked ingredients into blender, including the beats and the lentils, add vegetable stock
- Blend until smooth
- Pour mixture into a large bowl, add the wheat gluten, 1/6 cup at a time (basically split the 2/3 cup into four portions)
- Fold in wheat gluten until it’s not sticking to the sides of the bowl
- Spoon a tennis ball size, knead the dough in your palm until it’s not sticky at all anymore (1 minute)
- Create a short cylinder/ any tartare shape
- Set steamer and steam patties for 50 minutes, flip half way
- With some olive oil, sear both sides for 30 seconds/ bake for 20 minutes, flip half way
- Freeze the Patties, wrapping them up independently so they don’t stick together. Store up to 3 weeks!
And It’s a Wrap!
- In a large Tortilla Wrap, layer with your choice of greens (mixed greens, arugula, spinach)
- horizontally place the peppers, sweet potatoes, carrots and purple cabbage
- fold in left and right sides, then roll the wrap away from you
- cut into half
Tips and Tricks: Leave 1.5 inches on both the left and right side of the tortilla wrap unoccupied by any fillings!
It’s Knota Steak Tartare!
- You can be pretty agile with the steak tartare, with the right amount of wheat gluten, it works well as a spread! Supise!
- spread it on crackers, and top with pickled beans, eggplants with a bit of siracha and
- BAM! you got yourself a perfect appetizer
