Knota South-East Style Sweet Chickpea Burger Recipe

What do you need? \

4-6 Knota Burgers:

  • 1 block of Extra Firm Tofu (crumbled with hands)
  • 1/2 tbsp of tamari sauce (mix it with the tofu crumble)
  • 1 cup of Sweet Potatoes (palm size, chopped)
  • 1 stalk of chopped up lemon grass
  • 2 cloves of Garlic chopped
  • 1 handful of fresh Basil (leaves only)
  • 2 tbsp Vegan Fish Sauce
  • 2 tbsp Olive Oil
  • 1 tbsp ginger
  • 1 handful of Cilantro
  • 1 tsp of Turmeric
  • 1/2 tsp of White pepper
  • Lemon & Pepper Salt (can use regular salt and pepper as well)
  • 1/2 cup Rolled Oats
  • 1/2 cup of Walnuts
  • 2 tbsp Chia Seed Egg (Chia Seeds soaked in water for 10 minutes)
  • 1 cup of Chickpeas (cooked)
    • Note: I did not put the chickpeas in the blender to give the burger some uneven texture.

And we are ready!

  • Bake Purple ingredients for 35 minutes at 425 C.
    • 1 block of Extra Firm Tofu (crumbled with hands)
    • 1/2 tbsp of tamari sauce (mix it with the tofu crumble)
    • 1 cup of Sweet Potatoes (palm size, chopped)
    • 1 stalk of chopped up lemon grass (spread it on top of the sweet potato)
    • 2 cloves of Garlic chopped
    • 1 handful of fresh Basil (leaves only)
    • 1 tbsp Vegan Fish Sauce
    • 2 tbsp Olive Oil
  • While the above are baking, blend the Green ingredients:
    • 1 tbsp ginger
    • 1 handful of Cilantro
    • 1 tsp of Turmeric
    • 1/2 tsp of White pepper
    • Lemon & Pepper Salt (can use regular salt and pepper as well)
    • 1/2 cup Rolled Oats
    • 1/2 cup of Walnuts
    • 2 tbsp Chia Seed Egg (Chia Seeds soaked in water for 10 minutes)
    • Chilli Powder (optional)

These golden balls\\

  • Press or blend 1 cup of chickpeas in a separate bowl
  • Remove the Lemongrass from the pan
  • Mix all cooked and blended ingredients together
  • Scoop out 1 cup of mix, roll them into tennis balls

It’s Bake Time!

  • Preheat your oven to 425 C
  • Press the balls into any shape you wish, I made mine flatter and oval shaped for a more crispy surface; kind of looks like pieces of chicken breasts!
  • Bake for 15 minutes on 1 side
  • Flip and bake for 10 minutes on the other side

Storage: You can stack the uncooked burgers between layers of parchment paper if you are not eating 6 burgers at once, store it in the fridge for up to 7 days, or in the freezer for a month:)

  • This is “Knota” -typical burger, the lemongrass and vegan fish sauce makes it unique, the turmeric gives it the beautiful golden color, the walnuts give it the nutty flavor, and the ginger makes it the perfect autumn/ winter burger.
  • Sides:
    • Cilantro, Vegan Fish Sauce & Corn (cold dish)
    • Balsamic Vinegar & Fresh Basil on sliced Tomatoes (cold dish)
  • Optional: Coconut Rice.
